  • 4 tablespoons melted unsalted butter
  • 2 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mix together the crumble topping ingredients: flour, brown sugar, granulated sugar, cinnamon (if using), and melted butter until clumpy; set aside.
  3. In another bowl, whisk together the dry ingredients: flour, baking powder, salt, and cinnamon.
  4. In a large mixing bowl, cream together the sugars and room-temperature butter until light and fluffy. Add eggs, sour cream (or yogurt), and vanilla extract; mix well.
  5. Gradually combine the dry mixture with the wet mixture; stir in milk until just incorporated. Gently fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and top generously with crumble mixture.
  7. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Allow cooling slightly before transferring to a wire rack.
