  • 1 tsp cornflour (cornstarch)
  • 10 g unsalted butter
  • 8 g light brown sugar
  • 17 g plain flour
  • 1/8 tsp cinnamon
  • 175 g unsalted butter
  • 175 g light brown sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 175 g unsalted butter
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the Apple Filling: Peel, core, and chop apples. Cook with light brown sugar, cornflour, cinnamon, and mixed spice in a pan over low heat for about 15 minutes until soft. Allow to cool.
  2. Make the Crumble Topping: Preheat oven to 180C (375F). Combine plain flour, light brown sugar, and cinnamon; rub in butter until crumbly. Spread on a baking tray and bake for 10-15 minutes until golden brown.
  3. Prepare the Cupcake Batter: Preheat oven to 160C (350F). Cream softened butter and light brown sugar until smooth. Add eggs one at a time, whisking well after each addition. Fold in self-raising flour, cinnamon, and mixed spice.
  4. Bake Your Cupcakes: Divide batter into cupcake cases and bake for 20-25 minutes until golden brown. Cool on a wire rack.
  5. Fill and Frost: Core cooled cupcakes and fill with apple filling. Make buttercream by mixing softened butter with icing sugar, cinnamon, and milk until smooth. Frost cupcakes and top with additional apple filling and crumble.
