  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, sliced)
  • 690 g cream cheese (softened)
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 50 g brown sugar
  • 50 g all-purpose flour
  • 20 g rolled oats
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 75 g granulated sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Crush biscoff cookies and mix with melted butter. Press into the bottom of a springform pan to form the crust.
  3. For the topping, combine melted butter, flour, brown sugar, and oats until crumbly.
  4. Toss apple slices with brown sugar, cinnamon, and cornstarch; layer over crust.
  5. In a bowl, beat cream cheese and sugars until smooth. Add Greek yogurt, vanilla, spices, and eggs; mix until combined.
  6. Pour cheesecake filling over the apple layer and top with crumble mixture.
  7. Bake for about 85 minutes until set and golden on top; cool completely before refrigerating for several hours or overnight.
