  • 8 oz cream cheese (softened, for frosting)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, cream softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla.
  5. Gradually add dry ingredients alternately with milk until just combined.
  6. Fold in diced apples gently.
  7. Fill muffin cups two-thirds full and top with streusel mixture.
  8. Bake for 22–25 minutes until golden brown and a toothpick comes out clean.
  9. Let cool before frosting with the cream cheese mixture.
