  • 1½ cups peeled and diced apples (about 2 medium apples)
  • For the streusel topping: ½ cup all-purpose flour, ⅓ cup packed brown sugar, ¼ cup old-fashioned oats, 1 teaspoon ground cinnamon, ¼ teaspoon salt, ¼ cup cold unsalted butter (cubed)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. For the streusel topping, mix flour, brown sugar, oats, cinnamon, and salt. Cut in cold butter until crumbly; refrigerate until needed.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Beat softened butter and sugar until light and fluffy. Add eggs one at a time along with vanilla extract.
  5. Gradually incorporate dry ingredients with milk alternately; fold in diced apples gently.
  6. Fill muffin cups two-thirds full with batter; top with streusel.
  7. Bake for 22-25 minutes until golden brown; cool before frosting.
