  • 4 medium apples, peeled, cored, and sliced

  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup oats
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/3 cup butter substitute (like coconut oil), melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a springform pan.
  2. Mix oats, flour, brown sugar, and melted butter substitute until crumbly. Press into the bottom of the pan.
  3. Toss sliced apples with brown sugar, cinnamon, and nutmeg; spread over the crust.
  4. Beat cream cheese until smooth; gradually add sugar, then mix in vanilla and lemon juice. Add eggs one at a time until well combined.
  5. Pour cheesecake mixture over apples and sprinkle remaining crisp topping on top.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center. Let cool before refrigerating for at least four hours.
