  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat oven to 350°F (180°C) and prepare a springform pan with foil for a water bath.
  2. Mix graham crumbs, brown sugar, and cinnamon; combine with melted butter and press into the pan.
  3. Prepare apples by slicing and tossing them with brown sugar and cinnamon.
  4. Create the crumble topping by mixing flour, oats, brown sugar, and melted butter until crumbly.
  5. Beat cream cheese until smooth; add sugars, eggs one at a time, sour cream, cornstarch, and cinnamon.
  6. Layer half of the cheesecake batter in the pan, followed by apples, remaining batter, and crumble topping.
  7. Bake in a water bath for about 55 minutes until set but slightly jiggly in the center.
  8. Cool gradually in the oven before chilling in the refrigerator for at least four hours.
