  • 2 cups apple cider (reduced to 1/4 cup)
  • ½ cup unsalted butter (room temperature)
  • 1 ¾ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1½ teaspoons cinnamon
  • 2 eggs
  • ¼ cup apple butter or unsweetened applesauce

Instructions

  1. Preheat your oven to 350°F. Reduce the apple cider in a saucepan until it measures about 1/4 cup (30-35 minutes). Allow it to cool.
  2. In a bowl, sift together flour, salt, baking powder, baking soda, and spices.
  3. In a large bowl, cream together softened butter and sugars until light and fluffy. Add eggs one at a time along with cooled apple cider and apple butter or applesauce.
  4. Gradually mix in dry ingredients until just combined.
  5. Drop tablespoon-sized mounds onto lined baking sheets spaced apart. Bake for 11-13 minutes until springs back when touched.
  6. Cool on wire racks before frosting.
