2 cups apple cider (reduced to 1/4 cup)
½ cup unsalted butter (room temperature)
1 ¾ cups all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
¼ teaspoon baking soda
1½ teaspoons cinnamon
2 eggs
¼ cup apple butter or unsweetened applesauce
Instructions
Preheat your oven to 350°F. Reduce the apple cider in a saucepan until it measures about 1/4 cup (30-35 minutes). Allow it to cool.
In a bowl, sift together flour, salt, baking powder, baking soda, and spices.
In a large bowl, cream together softened butter and sugars until light and fluffy. Add eggs one at a time along with cooled apple cider and apple butter or applesauce.
Gradually mix in dry ingredients until just combined.
Drop tablespoon-sized mounds onto lined baking sheets spaced apart. Bake for 11-13 minutes until springs back when touched.
