  • 1 cup brown sugar
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 cup sour cream
  • 1/3 cup reduced apple cider
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 2 tablespoons all-purpose flour

Instructions

  1. Reduce fresh apple cider with mulling spices in a pot over high heat until syrupy.
  2. Preheat the oven to 350°F and prepare the crust by mixing crushed cookies, melted butter, salt, and powdered sugar. Press into a springform pan and bake for 10 minutes.
  3. Lower the oven temperature to 325°F. Beat softened cream cheese and brown sugar until smooth.
  4. Incorporate sour cream, vanilla extract, salt, cinnamon, and reduced apple cider. Fold in eggs and flour gently.
  5. Pour filling into the crust and bake in a water bath for 90 minutes until set but slightly wobbly in the center.
