  • 5 oz arugula
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup chopped figs
  • 1 cup pecan halves
  • 2 Tbsp maple syrup
  • 1/2 cup olive oil
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove, minced
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt (to taste)

Instructions

  1. Preheat the oven to 350°F. Toss pecans with maple syrup and sea salt; spread on a parchment-lined baking sheet and bake for 5-7 minutes until golden.
  2. In a bowl, whisk together olive oil, maple syrup, lemon juice, Dijon mustard, minced garlic, balsamic vinegar, pepper, and salt to make the dressing.
  3. In a large bowl, layer arugula and top with sliced apples, figs, red onion, and toasted pecans. Drizzle half of the dressing over the salad and gently toss.
