  • 1 cup blanched almond flour
  • ½ cup light brown sugar
  • ½ cup salted butter (softened)
  • 1½ tablespoons all-purpose flour
  • 1 large egg
  • 1 teaspoon pure almond extract
  • ¼ cup sliced almonds
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 400°F.
  2. In a mixing bowl, combine almond flour, brown sugar, butter, all-purpose flour, egg, almond extract, and a pinch of salt. Mix until just combined.
  3. Roll out the thawed puff pastry into an 11×11 square and cut into twenty-four 2×2 inch squares. Press each square into the cavity of a mini muffin pan.
  4. Fill each pastry cup with about one tablespoon of the almond filling and top with sliced almonds.
  5. Bake for 10-15 minutes until golden brown. Cool on a wire rack and dust with powdered sugar before serving.
